Peaches ‘n’ Cream Overnight Oats

Mix these fiber and protein rich ingredients together the night before and you are good to go the next morning. A grab and go breakfast filled with vitamins and minerals like manganese, phosphorus, magnesium, copper, zinc, and iron. A perfect breakfast to support a healthy weight and give you energy for the day.

Ingredients:

2 cups rolled oats (Gluten-free if so desired)

2 cups creamy oat milk (Storebought)

2 Tablespoons of chia seeds

1 Tablespoon of golden raisins

¼ tsp. cinnamon (optional)

¼ tsp. anise seeds (optional)

2 Tablespoons of pure maple syrup

2 peaches, diced  (fresh or canned, I like the Costco glass jars)

Step 1

Combine all ingredients except peaches in a large mixing bowl in the order given. Stir until evenly combined and let sit for 5 minutes to allow oats and chia seeds to absorb the liquid. Then add the diced peaches and fold evenly. 

Step 2

Transfer oat mixture into a pint jars, add some more oat milk to cover mixture, then screw on lids and store in the fridge overnight. 

Step 3

Take your jar of overnight peaches ‘n’ cream oats out of the fridge and enjoy cold or warm in the microwave. Top with a dollop of coconut whipped cream. You are off to a good start!
